Summary

Nutrition is an essential phenomenon in present-day culture. Current notions on health and body image lead us to a type of diet that is still not fully accepted. The weight of local food traditions and the importance of certain conceptions that had been ignored until now, can shed some light on the possible reasons for this failure. Anthropological analysis may help to overcome these difficulties.
