Summary

This Article covers some ingredients of the diet of shepherds and stock breeders in Euskal Herria (The Basque Country). Through different recipes, we observe the importance of cecina (cured beef) in the preparation of stews and other dishes, as well as the significant changes over the last few decades. We also include other elements of the shepherds´ diet that are not appreciated socially nowadays.
