Résumé

Globally, human biological diversity exist s within populations and across populations. Diversity occurs through the complex interaction of many processes, including nutrition. Globalisation of foods and food habit s occurred prehistorically and historically, and continues rapidly today, causing nutritional changes. Such changes affect the health of different people differently. This paper ighlight s diversity of effects on health and interest in evolutionary causes.
