Summary

The creation of tourist routes based on gastronomic resources provides alternatives for socio-economic development and regeneration in rural areas. This paper aims to characterize and evaluate a food route in Alentejo, a project outlined in the framework of regional development strategies. This tourist route was developed from traditional qualified products to promote their marketing and increase their value.
