Summary

Bilbao, has always been, first,a vitally important point of commercial exchange in Cantabricarea. At the same time, it has become a relevant financial town within the North Atlantic axis. These premises made the development of a culinary culture possible, with the participation of all the active elements of Bilbao society. The development of gastronomic spaces of socialisation for the middle class as a whole, that was becoming consolidated in this town, added to the pleasures from abroad enjoyed by the emerging middle class of late nineteenth century Bilbao, which did not scorn traditional cuisine. Finally, people´s homes were the daily redoubt of culinary activities in late nineteenth century Bilbao. This, at the same time, reflected a well supplied society rooted in gastronomic domains that dated back to the beginning of time.
