Summary

Analysis of the transformations that have taken place in the nutritional behaviours initiated in the late fifties and consolidated in the following years. The study of their incidence provides data with which to understand the sense and the relationship with other social behaviours. The author also tries to explain the current equation between tradition and the world-wide uniformity outlined in connection with the culture of food.
